SODA 101

Soda Making Instructions (with yeast) – 5 gallons
* Rehydrate yeast > Dissolve ¼ tsp in ½ cup drinking water at 85-95 Deg F. Allow to rehydrate for at least 10 min.
* In a large stock pot heat 1-2 gallon drinking water to 130 Deg F
* Add and completely dissolve 4-5 lbs of preferred sugar
* Cool mixture > Cool by placing in a cold water bath in the sink
* Stir occasionally until mixture is 95 Deg F or less
* Add up to 4oz Gnome soda extract and stir well
* Add yeast and stir well
* Top up mixture to 5 gallons with 3-4 gallons cool drinking water and stir well
* Use a sanitized 1 quart glass measuring cup and a sanitized food grade funnel to help fill ~10 sanitized 2-liter plastic bottles to 2 inches below bottle neck
* Place bottles on their side at room temp for 2-3 days or until bottles are firm * Chill bottles in freezer for 2-3 hours to bring yeast to dormancy
* Serve and enjoy!
* Keep bottles stored upright in the fridge

Soda Making Instructions (forced carbonation) - 5 gallons
* Heat 0.5 gallon – 1 gallon water to 130 Deg F
* Dissolve in 4-5 lbs preferred sugar
* Add up to 4oz Gnome Soda Extract * Transfer to Corny tank * Top tank up to 5 gallons with cold drinking water
* Fill tank up with 35 psi CO2
* Refrigerate for 6-8 hours
* Sample Brewing Tips
* Use 4 oz. Gnome Soda Extract for a 5 gallon batch with full, rich flavor
* DO NOT expose Gnome Flavor Extracts  to high heat or direct sunlight
* We STRONGLY recommend the use of plastic 2-Liter Bottles or a Draft System
* Sanitation is the key to success in any brewing practice
* Care must be taken to not over-carbonate
* Do not use more than 1 lb of cane sugar or equivalents per gallon of beverage
* The maximum amount of time necessary to carbonate is 3 days at room temp  
* Keep refrigerated bottles for up to a few weeks
Suggested Sugar Amounts Per Gallon -
~2 cups/lb Cane sugar
-2 cups Corn sugar
-2.25 cups Brown sugar
-2 cups Maple syrup
-3.25 cups Honey
-3 cups Molasses
-3 cups Turbinado sugar (raw) -2 cups
*Make a sugar free, no carb Gnome Soda with a sugar substitute. Feel free to experiment with different amounts and combinations of Soda Gnome Extracts and sugar equivalents to suit your taste.
